Biltong, Dröewors and Boerewors
Biltong as we know it today evolved from the dried meat carried by the wagon-travelling Voortrekkers, who needed stocks of durable food as they migrated from the Cape Colony (Cape Town) into the interior of Southern Africa during the Great Trek. The word Biltong comes from the Dutch bil ("rump") and tong ("strip" or "tongue").
Biltong is similar to Beef Jerky in that they are both spiced, dried meats. However it differs from Jerky in ingredients, taste and production process.
The ingredients used to prepare Biltong, together with the drying process, cures the meat as well as adding texture and flavour. Biltong meat is also generally cut much thicker than Jerky.
To ensure a superior quality, flavour and taste, Sydney Butcher Boys Biltong spends two days in preparation using imported South African spices. It then undergoes a 3 day drying process in our climate controlled drier.
